Can I add my own analysis?
Yes. You edit the map and the process pages, and the recommendations are yours: Consularis does the discovery, not your job.
Who owns the data once I leave?
Your client. The map stays in their workspace, hosted in Europe, and they can export it or have it deleted at any time.
Will my client's people answer honestly?
Their interviews stay private: nobody at your client reads them, and you don't either. Each person gets a report on their own work, so they have a reason to answer well.
